ZAZAS AT-HOME PIZZA KIT INSTRUCTIONS

Before You Start (this part matters)

    1.    Preheat your oven to its MAX temperature, usually between 500 and 550°F.

    2.    While the oven is preheating, place one of the following inside the oven.

     •    Pizza stone

     •    Pizza steel

     •    Or a large, sturdy pizza pan

    3.    Let the oven preheat at least 45 minutes to 1 hour with the stone, steel, or pan inside so it gets piping hot.

Using a Pizza Oven Instead?

If you are using a specialized indoor pizza oven or an outdoor pizza oven like an Ooni, you can disregard the home oven preheating instructions above and follow the manufacturer’s recommended settings for your oven instead.

Bake time may vary depending on the temperature of these alternative ovens, so keep an eye on your pizza while it cooks. Everything else in the process stays the same.

What You’ll Use to Launch the Pizza

    •    Ideally, a wooden or metal pizza peel

    •    No peel. No problem.

    •    Use a large cutting board lined generously with semolina, also known as dusting flour

Stretching the Dough (New York Style)

    1.    Lightly flour your work surface. Marble or any smooth countertop works best.

    2.    Sprinkle dusting flour on both sides of the dough to prevent sticking.

    3.    Using your fingertips, press the dough into a flat circle, leaving a slightly thicker edge.

    4.    Once it is a medium size circle, pick it up and let gravity help.

    5.    Hold the dough with both hands at 12 o’clock, gently pulling the edges little by little.

    6.    Rotate and stretch slowly until it reaches your desired size.

Do not rush it. Slow stretches make better pizza.

Building the Pizza

    1.    Transfer the stretched dough onto your floured pizza peel or cutting board.

    2.    Add the sauce and spread evenly with a spoon. (Leave a small border around the edge for that classic New York crust)

    3.    Evenly distribute the mozzarella cheese.

    4.    Finish with a generous pinch of grated Parmesan.

Launching the Pizza (the fun part)

1.    Open the oven and line up your pizza with the hot stone, steel, or pan.

    2.    Place the peel or cutting board just above the surface.

    3.    Use a quick forward and back shimmy motion with small, fast movements.

    4.    On the final move, pull the peel back confidently and let the pizza slide into the oven.

Cooking the Pizza

    1.    Bake for 7 to 10 minutes, depending on your oven and preference.

    2.    Watch closely and rotate occasionally using a spatula for even cooking.

    3.    Cook until it looks perfect to you, whether lightly done or well done.

Finish and Enjoy

    1.    Remove the pizza from the oven.

    2.    Let it cool for a few minutes.

    3.    Slice into large triangles.
